Recipe inspired from ‘Les Carnets De Julie’ Tv show. Aubergines à la Bonifacienne (Stuffed eggplant boats) is a specialty from the town of Bonifacio, the most beautiful town on the French island of Corsica in the Mediterranean also known for is popular sheep’s milk cheeses.

So in turkey we have a similiar recipe, we first fry the eggplant fully and later fill the inside of it with cooked ground beef , onion, tomato paste etc. And finish it with some cheese on top it in the oven. I will try this recipe next time!

...and there is a vegetarian version of stuffed eggplants in Turkey called İmam bayıldı... which lit. means "the imam fainted"... 😀

yin yang cuisine thanks for the offer! Although i am not a real cook and pretty amateur about cooking. You can find this recipe by searching in the google or youtube ‘karniyarik turkish recipe’ you should try it it is one of my favourites , have a nice cook!

Thet basically the same as Genovese stuffed veggies, in Genova we do that also with zucchini, onions and bell peppers..... no wonder since Corsica was given by the Republic of Genova to France to close e debt in 1769, and also Genova had always a good relationship with the ottoman empire, ha big portion of Istambul was inhabited by Genovese, and if you analyze both cuisines the parallels are amazing ..... so many complimentary recipes i wonder how got what surely the exchange was equally being the to some of the most ancient cuisines of the Mediterranean .....history is beautiful

Such a great recipe. Trust Bruno when he says that the salt from the aged cheeses will be enough to carry the dish. I lightly seasoned the other components as I went and it ended up being too salty. Made it a second time exactly as the master suggests and it was perfection. Thanks Chef!

I made this and it is super delicious. I will say that I tried some baked and some fried and both my mom and I preferred the baked version. I did add a some parmesan cheese and a dash of olive oil on top at the very end and set the oven to broil for a minute which gave it a beautiful golden top. Even my husband who hates eggplant ate it.

It looks tasty. My mother has always prepared this recipe . She stuffs bell peppers with the same aubergine filling but instead of frying them, she makes a "gratinée " version with tomato sauce.

I have been looking for this recipe for a long time, since i really enjoyed the dish in corsica years ago. In the beginning, I thought that was one of the restaurants’ specialities, though, thank god we have internet, I just figured out it was the traditional dish in corsica. Thanks for sharing this one x

Well, done that way even I could imagine aubergines could be good food but so far I've only had aubergines that were at best edible if I was hungry. This looks like another level but I will remain sceptical until I try it hehe! :D

Check out “karnıyarık”. You might want to try it. It means something like split belly in Turkish. It’a Turkish aubergine dish (for dinner) in which an aubergine is split, and it has a delicious minced meat filling with parsley.

It is indeed versatile since it is based on stuffing... pretty much each country has its own interpretation. Eggplants are abondant in India (its origin) China and middle-east, so soyons fou! 🌞

I enjoy french fries more often than you ☝️😊 but I can't help but feel like the frying process for this beloved ingredient isn't apropos. SO... I personally would try scooping out the centers first, oven roast the seasoned shells for an appropriate amount of time then go through the process you did with the filling, re-stuff the aubergine, roast till golden and melty, eh voilà! Non-greasy no-overcooked stuffed aubergines! My mouth is watering. Great recipe, though. Thank you, YOU'RE THE BEST! 🤗🤩🎉🏆

Diana Kelley Thank you for your suggestions!well, it does not come over cooked to begin with. And if you choose to roast it, roast them once stuffed.. if you roast the shell first, I won’t work🧐

@@BrunoAlbouze Grrrr... but if and when it is boiled it softens the shell then you fry it, extra soft? Won't roasting it be more gentle, plus carmelize the shell, which by the way, still has "some" aubergine stuck to the shell giving it body and substance? It might could work. 🤔🤔🤔 lol.. I know, I know... YOU'RE the professional. But... now I will try it and we shall see. 😊

La Corse ressemble à la Bretagne, mais ... en plus chaud ! je n'ai jamais réussi à cuisiner les Aubergines correctement !! est-ce que dans le cas d'ajouter de la viande, on peut la mélanger à la chair de l'aubergine (avec les pépins ?) ? faudra que je me lance un de ces jours ! Passez de bonnes Fêtes et revenez nous vite en 2020 avec plein de belles recettes encore et de projets culinaires !

La France est belle sous toute ses formes🌞.. Les grosses aubergines sont a proscrire dans se genre de recette. En effet, il y a de multiple combinations possible avec ou sans viande.. C'est une farce a la base alors soyons fou! 20VIN sera une bone année pour les 'gens bon' 😉

I was not expecting an answer from the Boss. Thanks for your channel and all the tips you give us. I will try to find aged gouda and see if aging can do any good, but in France if you speak of gouda it is clearly a cheese for kid or not cheese lovers. As I know that you know your thing I think it might be a good discovery. @Siebren Boon A lot of supermaket in France have more choice of good cheese that you can find in any other country in specialized shop.
