Ingredients
For the Caramel
½ cup White Granulated Sugar
2 tablespoons Water
For the Custard
4 slices White Sliced Bread
3 Eggs
500 ml Milk (full fat)
1 can / 300 ml Condensed Milk
½ tablespoon Pure Vanilla Extract
Method
Prehead the oven to 350F
In a non-stick pan or saucepan on a medium heat, add the sugar and water and allow the sugar to caramelize.
Pour the caramelized sugar into a 6” baking pan, swirl the baking pan to cover the bottom of the pan with the caramel. Set aside to cool.
Cut off the crust of the slices of bread. Cut the centre of the bread into small cube size pieces and add them the blender. Now pulse them till they become fine breadcrumbs
Add to the blender the eggs, milk, condensed milk and vanilla extract and blend till the pudding mixture is well combined and smooth.
Heat water in a kettle to create a water bath for the pudding
Pour the pudding mixture into baking pan and place it in a bigger baking dish.
Cover the pudding with an aluminium foil
Place the baking dish into the oven and carefully fill the baking dish with the warm water till half way up the side of the baking pan.
Allow to pudding to cook for 1 hour 30 minutes. Halfway through the baking time carefully remove the aluminium foil and allow the pudding to baking uncovered for another 45 minutes.
Once done take the baking dish out of the oven and allow the pudding to cool gradually in the warm water for 10 minutes
Now remove the pudding from the water and allow to cool completely before refrigerating for at least 4 hours before unmolding it.
