All the Rendang we had in Indonesia, including Sumatra, used Daun Salam rather than Kefir Lime Leaves.

We are malay in Malaysia is a not like people who want to claim anything. For us, Rendang Malay is our dish. Our rendang is not 100% same like indonesia rendang. We have atleast 3 type of rendang here. That is difference like in indonesia rendang. Every Hari Raya we cook rendang as one of permenent dish. We do this generation by generation for long time ago.

Hi, salt is used to dry up the pork skin to make it more crispy after frying. The coarse salt was chosen instead of fine salt, because coarse salt will not make the skin salty and it is more easier to be removed as well. Hope this helps and thanks for the comment😊

Hi, you can use normal oven but it will take longer than fan oven. If you live in a place with warm sunny weather, you can dry it under the sun as well. 😊

Has your meat already been scored prior to you poking holes? What is the difference between your large holes and other recipes' small holes, using nails or tooth picks?

The meat was not scored prior the holes poking process, and it is best to use something firm and sharp(small knife) to make proper holes into the skin for better end result.

Hi, coconut milk usually split at high heat. Using pressure cooker means using extremely high heat, will it split and curdle based on your experience ?
