Hello rebel cooks, in this video I show you how to make a Flemish carbonade, a traditional cooking recipe from Belgian cuisine (Belgian Flanders) and that of Nord-Pas-de-Calais (French Flanders). Cooking Flemish carbonade consists of stewing pieces of beef, pork, or horse meat, in a pot with beer and onions (by tradition, a dark Belgian beer, or beer from the North -Pas-de-Calais). It is sometimes prepared with gingerbread like here and a little brown sugar (also called vergeoise) or Liège syrup (we speak of carbonade à la Liègeoise). Traditionally, this dish is accompanied by fries prepared in beef fat.

Ingredients
1 tablespoon of brown sugar
Salt
1 bouquet garni
250 g whole smoked bacon
4 slices of gingerbread (if possible homemade)
3 tablespoon Dijon mustard
1 kg of lean beef for braising (chuck, roost, shank, etc.)
1 L of dark beer
400 g onion
30g butter
