I was loving the recipe And love your videos But garlic chilli pickle really makes this dish! I have absolutely no idea what that is. We don’t have that in the uk. Is there any alternative? Great channel 👍

Thank you! Did I say garlic chili pickle? Oops. Garlic pickle. For sure you have it in the UK. I would stay away from Pataks but the other brands (I see Priya on Amazon UK) is what I usually use.

Safest thing to do is cook it twice unless you are confident you can really fry double the curry base hard enough to get the flavour. The hotel base isn't really made to be interchangeable with regular base. Garlic chilli chicken hotel style is on the list though. I like garlic chilli chicken:-)

I thought aluminum is reactive cookware and will react with acidic ingredients.

I'm not suggesting aluminium is the right or wrong thing to use. They have great thermal properties for not a lot of money. A good stainless steel/aluminum multiply pan works as does carbon steel. The only pans I would stay away from are cast iron and only because it is easy to get into trouble with them. They are slow to heat and slow to cool down.
