椒盐,这个点心口味跟五仁,在中式点心界是平起平坐的地位。相对于五仁让大家大爱大憎,它就温柔很多,顶多就是没感觉。这款鸭尾酥加入一点小小的心机,味道有很大提升,希望大家喜欢😀😀!

椒盐鸭尾酥(12个)
水油皮
低筋面粉 60g
高级面粉 30g
植物油 15g
细砂糖 4g
盐 1g
水 47-50g
油酥
低筋面粉 75g
植物油 35g
椒盐馅
1)万用芝麻馅 75g(去皮花生40g,核桃仁12g,松子仁6g,白芝麻20g,红糖55g,细砂糖35g,面粉30g,猪油20g,热水融化红糖用30g,全部炒熟加猪油拌匀,多做一点分小份冷冻保存,可用数月)
2)熟黑芝麻 20g
3)熟面粉 20g(筋度无要求)
4)盐 2-3g(依个人口味添加)
5)花椒粉 1-2g(依个人口味添加)
6)红糖 20g(可选)
Duck tail Pastry(yield:12 pcs)
Pastry dough
60g cake flour
30g bread flour
15g vegetables oil
4g sugar
1g salt
47-50g water
Shortening paste
75g cake flour
35g vegetables oil
pastry filling( sweet and salt sesame taste)
1) 75g sesame seeds paste
(peanut 40g, walnuts 12g, pine nuts 6g, sesame seeds 20g, brown sugar 55g, granulated sugar 35g, cake flour 30g, lard 20g, hot water 30g( for melting brown sugar). Cook all the seeds and flour, stir into sugars and melted lard. Make more at a time, can be stored in the freezer for a couple of months.
2) 20g black sesame seeds
3) 20g cake flour
4) 2-3g salt( to taste)
5) 1-2g ground Sichuan Peppercorns
6) 20g brown sugar (optional)
