BREAD ON Tuesday - Lambsquarters Bread
Call it what you want.... Goosefoot, Goose Foot, Lambsquarters, Lambs Quarters, Wild Spinach, Pig Weed, Fat Hen, Poor Man's Spinach, and the list goes on and on. But whatever you want to call it, I call it DELICIOUS!!! It is one of the most versatile and nutritious vegetables that I know of. And I am thankful that I have been so very blessed to have it growing so abundantly on my greenhouse, so in the coming months, you will probably be seeing lots of recipes making good use of this wonderful green veggie.
Sorry to be so late with our video. This was a big video and we have been working on it all day. You will understand as you watch.
Don't get me started on the pancakes really and truly they were the best I had ever had. I only got one Anna found a new favorite dish also. Y'all give these a try I'm sure you will really enjoy them.

This is awesome. I am becoming sensitive to gluten. Most the time after eating it now I get a weird lumpy butter knife feeling in my throat. Goes away after awhile but after. Watching Barbara O’Neil and learning that they DID change the wheat plant(sorry don’t remember the date) it encourages me to move away from mainstream processed food more and more

Good to see other folks using lambsquarter. We also cultivate it along with plantain, dandelion, chicory, purslane, wild carrots, wild garlic, and a local wild onion chive that folks around here simply call a wild onion. We also have transplanted the wild black raspberry that is happy to grow in more fertile soil and thus give us great harvests every year. Happened upon your video on making lambsquarter flour and you mentioned making bread of it so here I am. So, I bid you in the Hebrew a hello, a goodbye, and a blessing all rolled into one: Shalom b'Yahushuah, ha Mashiach, amein.

I dry lamb quarter, and add it just about everything, soups, stew meat loaf, anything you can think of all winter long. I even add some to the rabbits and chickens feed.

Millet, Sorghum and Flax all make great flour and Breads ...without Gluten Free flour!!!

I 'dehydrate' orange & lemon peels in the back window of my old car. It works great! Gotta try your recipes using the Lambsquarter flour!

Just wondering if you are making lovely healthy pancakes, why oh why don't you also use pure maple syrup instead of what I saw your youngster holding in the video! Not criticizing just wondering. Thank you for the info, I have lots of lambsquarter growing and am looking for ways to use it. Blessings.

You said you use your truck! Im going to make my homemade yogurt with raw milk in my car, was trying to find a warm/safe place to put it. I live with other people and them keep it cool in the house. I am going to try the lambsquarter flower too

It's a lot simpler than what you've done, I'll admit. Impressive ingredients; looks a good combination you've used btw, but difficult for self-sufficiency. Thanks for introducing me to lambsquarter.

I just had to watch this after i saw the harvesting of lambsquarter, great ideas I love your oven, I don't think you have to knead gluten free dough so much. when I make it I thoroughly mix the dry and use xanthan gum too then just mix the wet enough to be mixed and kinda build up my loaf in the pan. Gluten free flours generally makes a dense loaf depending on the ingredients you can get it to mimic the stickiness of gluten. But you're not gonna get that kneaded binding of gluten and rising CO2 pockets that you would with wheat or rye.

Are these recipes written down somewhere, so I can copy them? Also, I just found out about a wonderful gluten free flour mixture made by America's Test Kitchen a GF flour blend. They did lots of testing and tell what works and what doesn't and why. The recipe is on their site: www.americastestkitchen.com/guides/gluten-free/americas-test-kitchen-all-purpose-gluten-free-flour-blend. Also, if you are going to make wonderful GF homemade bread and pancakes, I suggest you also use pure maple syrup and local honey (local can be within 100 miles of where you live). I loved learning about how to use LQ, I have some growing and have used it in smoothies, stir-frys and soups so far. I am also learning about other nutritional weeds and am using them too. You said 1 half tablespoon bake soda and another 1 half tablespoon powder did you mean teaspoon?

There are 3 teaspoons in a tablespoon. So a half tablespoon is more than a teaspoon. Not sure what the recipe actually is, but in the first recipe they called for 3 teaspoon of honey which could have just been said as a tablespoon. I know this for a fact from my background in science and medicine.

If there's no gluten why would you knead it? Kneading is to develop gluten.

I applaud your use of nature's bounty and like your videos. However, for goodness sake why are you attempting to go gluten free? Do either of you have celiac disease? Been diagnosed with gluten intolerance? If not, there's no reason to avoid gluten. It's just a fad like being vegan. I know the latest fad is to say, "We weren't meant to consume gluten. Our hunter/gatherer ancestors didn't." Yes they did. They gathered whatever food was available and that included grains with gluten. Before the vegans jump on me, our ancestors ate meat. I know many of you say meat today equals suffering and pain for animals. Well do you eat cashews? Then you're eating pain and suffering. Most of our cashews come from India where they're processed by hand. There's a layer of acid between the shell and meat of a cashew and it's tough to crack. An end is nipped off then the workers pull the shell off. They suffer burns on their fingers and hands and many a worker has lost fingertips in the cutter. Clinics near cashew processing plants report that 40% of their patients are cashew processing related injuries. What's worse is the workers don't go to a clinic until the pain is unbearable, usually when the burns under the fingernails become infected. They can't afford the cost and the plant doesn't pay for treatment for work related injuries. These people earn about $2 a day, most are poor women and many are barely out of adolescence. So vegans before you jump down my throat please put your bag of blood cashews down. Sorry I digressed, just wanted to let you know if you don't have a diagnosed condition that forbids gluten consumption, there's nothing wrong with gluten. You make great videos, thank you!

I wouldnt go that far about our ancestors eating meat.. It all depends on how far you go back. I think meat became food when there were no plants around to eat... It doesn't make sense to burn up valuable calories hunting wild animals which you may never get, when you have a village to feed, and theres 100s and 1000s of different plants packed with nutrients all around them. Indians learned all about these plants because they experimented with them and learned they could eat them. So common sense tells me animals if anything were more like a once in a blue moon meal. I couldnt see many enjoying animals when some of them taste terrible and one cant eat them without lots of seasoning and spices which tells me it probably shouldnt be eaten.. go and pick fruits and vegetables raw.. eat them.. dont need seasoning they more appealing to our palettes than any meat.. There's a reason for that.

@@ChristopherJones16 humans need protein. Yes you can combine plants' amino acids to make protein but our hunter gatherer ancestors ate meat. The calories used to forage were not always replaced by the plants. However, if they managed to kill an animal with a high fat content the calories used to hunt that animal were easily replaced. Our ancestors' brains grew exponentially after they began to use fire. Part of it was probably due to being able to stay up and communicate after sunset and that's probably when we began to developed language. However another part was that cooking meat makes the protein and fat more usable by human bodies. Brains need protein and fat to develop. While you can get protein from plant food there just isn't enough fat for brain development. Our brains developed by eating fatty meat. Nowadays we don't have to hunt and gather. We can go to rhe store and buy what we need so don't have to worry about replacing the calories used by hunting and gathering but our brains still need fuel. A little meat every now and then is a good thing. Unfortunately many modern people consume too much...too much fat, too much starch, too much sugar and too much meat. I was a ovo lacto vegetarian for years and felt great but actually felt better when I began to add meat and fish once or twice a week. Any more than that made me feel sick and/or tired. The moral of this story is everything in moderation is the key to healthy living. A little meat and/or fish, a little fat, a little starch, a little fruit and lots of legumes, whole grains and vegetables.
