We have harvested several bushels of peppers out of the greenhouse and it's time to put them away for winter! It's been the best gardening season we have ever had on the homestead, and that means many many hours and days of canning and other forms of preservation for the harvest. We also dehydrated some peppers for the first time this year! I'm not quite sure what I think of them just yet. How do you preserve your pepper harvest? Any good pepper recipes? Please share!

Dehydrated pellets are my to go … onions and potatoes too… Those are my main ingredients for my “weekend breakfast burritos” and that way I don’t have to can or use the fridge. I swear by my dehydrated basics ❤️

@@TheHeavenlyHomestead awesome! I'll probably dehydrate more of them in the next round of harvest! How do you reconstitute them? Like for burritos is it in the meat pan drippings or in the rice? Or with hot water separately?

@@SageandStoneHomestead I add hot water for a few minutes until they are soft but not mushy or too soft (the time depends on how much,) and then I add them to the drippings and they are such a life saver! I'm all for having all pre chopped and ready to throw together and make a delicious hot meal in minutes! You should try it For breakfast burritos we do potatoes ( red or white ) Onions ( red or yellow) Pepper ( any color but chopped small) Meat ( Ham, Bacon, Sausage) I pick 1 meat and do it that way but you can certainly do all three if you have them We only add salt and black pepper and the blend of those veggies does the rest! We then get tortillas ( regular not small or the biggest size ) Add cheese melt it and then fill them with the veggies and meat and I tell you they are divine! I also do 2X or 3X the recipe so I can freeze of keep in the freezer for the week so I never worry about breakfast lol

Louisiana Hot Sauce: 2 lbs. of Peppers (I used Cayenne, Poblano, Serrano, Jalapeno, & Banana), 4 TB Minced Garlic, 4 c. White Vinegar, 2 large White Onions Diced, 2 TB (slightly heaping) Salt, 1 c. Water. Cook until veggies are soft. Puree with immersion blender. Strain through fine mesh strainer. Steam or water bath can for 15 min.

Your jars of processed peppers look so pretty!! Such a lot of work, but so very satisfying!! Canning always makes me think of the verse in Proverbs that advises us to, 'look well to the ways of our household'!!! And you certainly are!! 😉 That chopper looks awesome, especially after I spent an hour finely dicing a bag of onions!! I might need to treat myself to one of those!! Take care & God bless!

Hello Heather! I have learned so much from your videos whether its gardening or canning. I am a 2nd year gardener and am going to be a first year canner. I was planning on water bath canning what I can until my tomatoes come ripen to make sauce and salsa. My mother had a friend that used to can and she gave my mom her old steam canner! I was overjoyed because I watched your videos on steam canning and saw that you canned salsa with it. When I finally got the canner in my possession ... It is very much an old steam canner. There is no gauge on the top of the canner to tell me if I am at temp or not. I searched and searched for videos on KZfaq on how to use it and found nothing. I googled as well and everything I found was for steam canners with a gauge. I was wondering if you could give me tips on how to use it or whether or not its worth even using. My moms friend no longer had any instructions for the canner either.

If you have a meat thermometer you can stick in the little hole where it vents (if it has one, be careful) start your time when it gets to 212 degrees F!! What an awesome gift!

How many bell pepper plants do you have this year? That is an incredible haul!

Someone asked that last week and I think I guessed 20-25. However after some thought I know I have one 30 ft row with peper plants every foot, so it's probably close to 40-50 plants with hot and snacking ones included.

Great video!!! Thanks so much for sharing your canning and preserving skills with us!!! I really want to find the "heatless" habenaros to plant next year. My husband loves habenaro peppers but I just don't like the heat!! If those are less than a jalapeno I could handle that heat! Stay safe!!!

Yes they have a very mild kick that I can eat and I don't like spice. It's basically like sprinkling some black table pepper on a sweet pepper. We got the seed from Baker Creek Heirloom Seeds, and they are called "Habanada".

Great vid. Its fun being in the kitchen with you. Learning so much. I'm not into spicy foods either but my sister gets me to try some so I've learned to appreciate it a little. Sending love to your beautiful family. Is there anything you can't do?! P.s. my overnight visit didnt go well. Got there & then came back almost immediately. It was a little disappointing but, I get it, I'm too much to handle for some people. Also, I'm grateful I didnt waste my night with a guy who let his company bribe him with $250 to get an experimental injection. He told me on the way back. Thank god I dodged that bullet.😆🥰

Peppers are some of the best to freeze. They will be just fine to stock in the freezer and then make cowboy candy with!
