Rich Fruit Scones in the Air Fryer.

I thought we'd try some Scones in the air fryer today. I haven't made Scones for years, so let's see how they turn out.
Ingredients:
8 oz self raising flour
2 oz margarine
1 oz sugar
2 oz currants / sultanas
1 egg beaten with enough milk to make 150ml
Method:
rub the margarine into the flour, then stir in the sugar and fruit.
Add the egg & milk mixture, leaving a little for the tops.
knead lightly on a floured surface and roll out to about half an inch thick.
Cut into little rounds.
Brush the tops with the remaining egg & milk mix.
Air fry at 180°c for 8 minutes.
oven 220°c, 425°f, gas mark 7

I've got a book that was my Mum's and she passed it onto me when I got married. It is from 1963, so it is 60 years old. it's called 'The Art of Home Cooking' from 'The Stork Cookery Service'. I still use it now, although it is falling to bits and kept in a plastic folder.

Ps. When watching Rik on Backyard Chef, he nearly always cooks/bakes everything in a HYSAPIENTIA Air Frier. Its stainless steel and has 3 shelf positions with 24 litre capacity. I was so impressed, my daughter bought me one. I love it. I started off with toast as i was so scared of getting it all wrong and setting everything on fire, but im mastering it now, bit by bit. Ive made Backyard chef's meatloaf, Vic Sponges etc etc. Im mary from North London 8:45pm. Originally from Durham City 50+ years ago. I still cook like a Geordie girl 😂

Maybe one day I'll get one, if I can find somewhere to squeeze it into my tiny kitchen. You've made some good things in yours.

I like using my air fryer, I can do a lot more in it than I thought I could. I had a slow cooker for Christmas so I'm experimenting with that at the moment. I've never had a Mary Berry recipe book, but I've seen her cooking on tv. I love scones, (tomorrow's vlog is cheese scones in the air fryer). Thank you for watching 😊

Love your videos. I have my mums cookery book she had when she got married in. 1933. It was with her gas cooker. Showing my age now ! 😀. It’s lovely to look through although I don’t use the recipes

@@therichardsonssimpleliving no not a lot from the 1950 1960 era. More like you was saying the ‘’ older type conventional recipes’’. Pies puddings etc. lots of whole dinner recipes utilising all the shelves. Fascinating really .

It's a great insight into how people used to eat. I like looking through my late mum's cooking book. She wrote recipes on bits of paper and they're still in her book. I do the same, I have bits of paper with recipes stuffed in my books. My daughter bought me a book especially for writing recipes in, but I still find myself using bits of paper! 😊

They look great Maria,I like my fruit scone with a nice thick layer of salted butter that you can see your teeth marks when you take a bite and I do like two separate halves, jam and cream of course if we're out somewhere but we don't tend to keep that at home as my wife attends a slimming club and that's a no no,another enjoyable video flower,really enjoying catching up on your back catalogue of videos Xx

Great fruit scone recipe, thank you. My first cook book when I got married in the seventies and still have today is Hamlyns all colour cookbook, torn and battered but would never part with.

Think most of us who have been housekeeping for years have at least one old cookbook that we treasure. The scones look so good.I am going to make some and add cinnamon .Thank you.

That's very true! I have a few which I take the odd recipe from, but I always go back to my good housekeeping one. Scones with cinnamon sound lovely 😊

The scones turned out really well in the air fryer. I love going through recipe books too. I like to find recipes that are easy and not too expensive to make, yet tasty. The bero books are good.

If no self-rising flour is on hand, use 1 cup all purpose flour, 1 tsp baking powder, 1/4 tsp baking soda and 1/4 tsp salt.

Nice video my first cook book when I was17 was the stork cookery book which I still use over and over again really stuck together with sticky tape hehe so 53yrs on still use it lol xx

Hi Maria, your scones looked lovely, i always put an eggwash or just milk on them and other pastry items. I think it gives them a better finish. I noticed our rolling pin, i had one like that, I've just bought a new one. I've had it about 50 years, it belonged to my mam, I've passed it into my friend who didn't have one, so hopefully she'll get a few years use out of it. I've got a bero book from years ago

I don't normally wash my pastry tops, but I won't waste spare mixture so I'll use it for the tops. I've had my rolling pin for years, but not as long as yours. When I was first married I remember using a milk bottle as a rolling pin as I hadn't got one, it always did the job! 😊

Around about 1975 everyone in North London was buying The Express Dairy cookery book off the milkman. It is called The Dairy Book of Home Cookery. First published 1968. Im still using it very often. Its easy to follow and has fabulous food

You will get a better rise if you roll them out a bit thicker ive found from experience thet cook books often advise rolling out too thin.

I agree. I've started patting them now instead of rolling, that seems a lot better. I get carried away when rolling and they end up too flat.

Pounds and ounces are the old measurements we used before the UK joined the EU. It was then changed to grams and kilograms which I never use. I also prefer the traditional recipes....but my air fryer does not exceed 200C. I noted you are using 180C but not achieving the anticipated rise 🤔

My scones are usually around this size. I suppose a lot of it is how flat I roll them, I sometimes think I roll them too much. I don't know how high the temperature my air fryer goes, probably 200°c I'm not sure.

I haven't done it in an airfyer yet but my normal oven recipe uses self raising flour plus I add baking powder. Granted I make big ones so it's around 350g of self raising flour and 1 tsp of baking powder
