If Molly were a dish, this would be it. This recipe contains three of her very favorite things: meatballs, herbs, and dill pickles. The ingredients may be vast, but please do not let that deter you from making it!! Just make sure you have a nice sharp knife--we’ll be honing our knife skills on the large quantity of herbs which you’ll use in both the pickle salsa and meatballs. In the end, extra-large balls get plopped atop a steaming bowl of pickle rice and smothered in more salsa and salty yogurt sauce for serving. What can I say?? I like big balls and I CANNOT LIE! Ingredients :
PRODUCE
2-3 bunches mixed tender herbs (cilantro, dill, parsley, and/or mint)
1 English cucumber
4 scallions
1 garlic clove
PANTRY
8 baby dill pickles, plus 3 tablespoons pickle brine
½ cup plus 1 tablespoon olive oil, plus more for drizzling
½ teaspoon red pepper flakes
Kosher salt, freshly ground black pepper
1 tablespoon coriander seeds (or 2 tsp ground coriander)
1 tablespoon fennel seeds
1 cup panko
¾ teaspoon ground cinnamon
2 cups long grain white rice
DAIRY
2 large eggs
1 cup whole milk yogurt
MEAT
1 ½ pounds ground meat, such as chicken, turkey, pork, lamb, and/or beef
