Here's the thing about BLTs. Though most people think of them as bacon sandwiches (piled high with bacon), a truly superb BLT will eat more like a tomato sandwich, and allow the bacon to take a back seat as a supporting character. Here's the problem with tomato sandwiches: you really shouldn't be making them with out of season winter tomatoes. The solution? Pickled tomatoes, which soften hard, unripe tomatoes, and impart them with the sweetness and acidity they're lacking in winter.
