150 gr. dough of 100% moisture on whole grain wheat flour
360 gr. ice water
500 gr. whole wheat flour, finely ground
10 gr. salt
20 gr. vegetable oil
+20 gr. ice water (dissolve salt in it)
+20 gr. additional water
If you are unsure of your wet dough skills, then take water for dissolving salt from the basic recipe: 340 grams of water for the dough and 20 grams of water for dissolving salt.
