The streets and the people are calling for Tartare! I ate out at a lot of restaurants on book tour and most (if not all) restaurants were serving some version of steak tartare. And I was ordering....all of them. Well, today on Home Movies, we’re making Tartare. Well, we’re actually making Steak like Tartare: A steak cut of your choice (I like hanger), seared rare and finished with a sauce that's basically all the ingredients in steak tartare: shallots, anchovies, capers, white or red wine vinegar, Worcestershire sauce and lots of fresh herbs. I’d dress anything in this (vegetables, grains, chicken thighs) but it’s especially good on steak. Serve it with a baguette toasted in the meat juices and you'll swear you're in France (or on book tour with me). Tartare for now!

I basically had that same caper breakdown yesterday. I was making Alison's tuna pasta and I forgot the capers so I needed to take them out quickly and of course I couldn't do it because of the damn narrow jar. I hate it so much. I ended up just draining the capers and I used them all. I just didn't have the emotional stability to take them out measure three tbs and then put the rest back.

Speaking of "lobe" I got to meet Lisa Loeb! 🥰 She was at a restaurant we were at and she came over to our table (long story). I had such a crush on her and she and Dweezeil were doing their Food network show. She talked with us for several minutes and while she did, she rested her hand on my shoulder. I was in heaven! ❤️💓🥰

I'm all for the cooked version of steak tartare -- and this will change my life. Steak tartare was my celebratory go-to until I had a poorly-made version on New Year's Eve and ended up with hepatitis. [I think the chef heard that the Tartar's first made this by wedging a steak under their horse's saddle, which marinated the meat with sweat.] End of tartar for me. But THIS will be a revelation. Steak like Tartar -- Meat cooked. All the flavour without a potential hospital admission. Just ordered a box of hanger steaks and soon on my way back to Tartarian Bliss.

Capers packed in salt usually come in squatter jars. And I find they have more caper flavour than the ones in vinegar. But they can be harder to find. And you have to rinse off the excess salt. When using the thin-jarred vinegar ones, I just use the back of a spoon to get them out.

From Mr. Caper: The narrow jars help to keep the caper buds submerged in the brine or vinegar that preserves them. Capers dry out pretty quickly when exposed to air and aren't worth using then.

My brother is a total Tartare maniac....it was the 80's menu thing...always ordered it for lunch. Korean restaurants have a nice one also as well..boyfriend is all over it at his favorite Korean BBQ restaurant.

I got a biggish wide mouth jar of anchovies. Perfect, easy to remove 1 or 2 and then put the lid back on. Also, here in Japan, the capers I buy come in a tiny jar that has a wider mouth opening which I can get a spoon in.

Tweezers - the solution to stupid Caper Jars. Either use them to remove the capers or to stab the person, in the lobes, that thought it was a good idea to put capers in a narrow jar. The choice is yours.

I just pour the capers in a smart jar. By smart, a mean a ajr you can get a spoon into, pour from, and tip the remains into your mouth with out getting the dreaded “caper eye”. Alison, you are the bomb. ❤🇬🇷 Mark (from Long Beach CA)

You can often find a 32oz wide mouth jar of Capers Nonpareilles (the best capers meaning the small capers) at Costco for $9.00 …. They make my summers

I agree that tartare is EVERYWHERE. And... I do order it every time lol. It can look a little gross or be a bit intimidating but I've never once disliked a steak tartare I've eaten and it's kind of incredible how different some of them are with like raw egg yolk and whole grain mustard v capers and vinegar. Proud to say I've eaten tartare more times than I can count ;)

No matter what I'm cooking I find myself reaching for chopsticks as a cooking utensil like 90% of the time anyway, and they are an adequate tool for digging out a specific amount of capers. But I still have to tilt the thing to get gravity on my side, which makes a mess. Really, the jar should just be wider. A mathy nitpick, halving the height would not necessitate a doubling of the width because of how circle area is calculated, ~1.4x the width would suffice to keep it the same volume of capers at half height. Even more reason to go half height double width... more capers per jar.

Wow, Trader Joe’s had hangar steak way back? I’ve been shopping there for YEARS, like decades, and I never saw hangar steak there, but we have bought it elsewhere, like specialty butcher shops, even bough it is not a cut of meat that ought to cost a lot. (I’ll take skirt steak any day.)

@alisoneroman I made this and it was so freaking delicious!! I immediately went out and bought both the ingredients (only needed a few) and I had capers from Trader Joe’s . I wasn’t as elegant as you finely chopping everything, I threw it all in a blender 😂😂 and I bought already cooked steak strips and paired it with toasted French bread, so damn good! I love traditional tartare, but this was a delicious take. P.S. ordered Sweet Enough and can’t wait to make the shortbread! Love your channel! Marve-

Honest question: I have seen some chefs say to skip putting pepper on the steak before cooking. It will just burn in a pan that hot. Then here is AR putting pepper on before cooking (and she's not the only one). What is the best way?

Chefs don’t know everything: put the pepper on. Let it rest. Put the salt on just before hitting the heat.

I’ve come to learn that I will salt food going into a hot pan and pepper it towards the end of cooking for that very reason. Pepper definitely burns.

Have you ever made steak au poivre? I grind the pepper and press it into filet mignon about a half hour before it goes on the grill. I’ve never tasted any unpleasantness or anything resembling “burnt.” Same with pan searing. To each his own, I guess.
