Roasting peppers is easy and fast. In this tutorial I show you how tow roast them two ways, on the stove top and under the broiler in your oven or on the bbq.

You can roast any kind of pepper you like such as mild bell peppers, all the way through anaheim, poblano, jalapeno, and hot habanero peppers. You can roast them all.
Just be really careful the hotter they get. Peppers have an active component called capsaicin which gives the pepper it's heat and can burn you.
Wearing gloves is often a good idea when you handle the hot peppers. Just rubbing your face and especially your eyes can get this oil in the there and cause a lot of pain and discomfort.
So the easiest and quickest way to roast peppers is on a gas stove. Rinse and dry the pepper and place it right on the grate of the burner.
I have the burner turned to medium high heat. Because the pepper is so close to the flame, it will begin to pop and blister pretty quickly so don't walk away.
As the pepper chars, use tongs to rotate the pepper as it cooks to char it on all sides.
Once the whole pepper is pretty black, place it in a bowl and cover with plastic wrap. Another alternative is to place the peppers in a paper bag and close it up.
Let it steam for about 10 minutes. This will continue to cook the pepper and soften it so that removing the black skin is easy.
When it's time to peel off the charred skin, the best method is to use a paper towel to wipe it off. Don't rinse the pepper under water as you will be removing all the flavor you created by roasting it. That would be a big no no.
Having a few pieces of char on the pepper will give it that roasted flavor and look of being roasted.
After you are done, you can chop the peppers to suit your recipe. You can use poblano peppers to make delicious chile rellenos.
You can also use any roasted peppers in sandwiches, pasta dishes, salads, pizza, burgers, guacamole, you name it.
The second way to roast peppers is by roasting them in the oven under the broiler. The key is to get the pepper as close to the heat source as possible so they blacken properly.
It takes a bit longer to roast the peppers in the oven but the advantage is that you can cook more at a time.

I really like to roast a pound of each, peel and seed, then buzz it in the Ninja and spoon it into ice cube trays. I keep those cubes in a freezer bags and toss them in the rice cooker, or anything that needs a little waking up. It's really handy, especially when I'm growing more than I can keep up with.

Love your recipes! I have a suggestion on the oven roasting or even roasting on the grill. Cut the peppers in half and deseed them, and you won't have to turn them over. Done in half the time.

In the oven , run (water soaked) toothpick through form and X you can turn ¼ turn easier. Keeping oven door closed longer , speeding up cook time ; saving energy.

Hi Robin. I am making peach salsa and it calls for hatch peppers. I never heard of them before seeing this recipe. I have a couple questions. Are hatch peppers hot? Do you know if I can “Can” roasted hatch peppers or would it be better to dehydrate them. Im trying to preserve food for the coming days. Thank you so much! I did Hatch chilis in the oven. Being a tough construction guy, I cleaned the charred skin and seeds off with my bare hands. BIG mistake. After baking soda, alcohol, soap , vinegar, gallons of cold water and about an hour I decided NOT to call 911. My wife now thinks I am a certified 70 year old baby. Sheesh!!

How would you store the roasted peppers ? I have a batch I just picked because it’s likely to freeze tonight. I’m thinking in a mason jar, covered in olive oil. But I’m not sure.

Hi Sandy, I usually only roast hot peppers like jalapeno or anaheim or poblano on the stove and then steam them and peel them. With bell peppers, you can just roast them in the oven. I like them to get a little charred and I don't peel them.

Hey, you put a lot of work in this video. Thanks for showing the different ways. I just got back from Arizona and had frybread with green chili and it was intoxicating and delicious so I am going thru find my way with all these video recipes to reconstruct my own Navajo bread, chili and all that goodness. Even the refried beans were good, I want to say they have bullion cubes and lard when the beans are in the pot. Thanks for your recipe, just subbed and have a great 4th of July Weekend Everyone!

ALWAYS make sure you have a range hood turned on. You don't want your house to be filled with smoke.

Once you roast your own, you never want to buy canned chili's again! I lived 18 years in Colorado and once a year we would drive to Santa Fe in the summer for fresh roasted peppers. I am drooling! I use the oven method. I pierce the peppers a couple of times as I have had them pop and in your face is not fun! Thanks for reminding me of how much I love these! Shredded, sautéed with onion and garlic atop rib eye steaks! I even ate them out of the can when I was carrying my son! With ketchup. Ha Ha. Any way I could get them.

the easiest way is to come to New Mexico in Sept. and have them roasted for you. Nearly every grocery will be roasting at that time :)

It appears you don't know anything about Mexican cooking. Only the skins on the outside are burned, and they need to be in order to remove them. Once removed, the chiles have a much enhanced flavor and they wouldn't taste the same without this important first step. There is no burned flavor whatsoever.
